Local food truck needs your help to win breakfast sandwich competition

The Smokestack

Total cook and prep time: 45 minutes

1 pack traditional Thomas’ English Muffins

1 package of smoked pork chops or Canadian bacon

1 lb. breakfast sausage

1 lb. Applewood bacon (reserve drippings)

1 large bag fresh chopped kale

1-1/4 cups All-purpose flour

2-4 cups 2 percent milk or whole milk

Salt and pepper to taste

2 Tbsp. apple cider vinegar

1 Tbsp. sugar

6 eggs

  1. In a large skillet on medium heat, fry bacon until crisp. Set aside and reserve drippings.
  2. In same skillet, cook sausage on medium heat until browned, breaking into small pieces. Do not drain. Add 1/2 of bacon drippings to the cooked sausage.
  3. Reduce to medium low and add flour 1/4 of a cup at a time until well incorporated. Add milk one cup at a time and mix until incorporated. Continue adding milk until desired thickness is reached while adding salt and pepper to taste. Use more for thinner gravy, less for thicker.
  4. Take remaining bacon drippings and heat over medium high in a large skillet. Add bag of kale and sprinkle top with sugar. Add vinegar and quickly cover with lid. Allow to "sweat" for 1-2 minutes, stir, cover and remove from heat.
  5. Heat skillet over medium and grease pan with nonstick spray. Cook eggs two at a time for 3 minutes on one side then gently flip and cook an additional 1-2 minutes. In the egg pan, heat smoked chop/Canadian bacon for 1-2 minutes.
  6. Toast your Thomas' ®English Muffin. Place bottom half of the on plate, add meat, gravy, kale and egg. Top with the muffin and enjoy.

A local food truck  will go English muffin to English muffin against food trucks from around the nation.

Saint Paris-based Pa's Pork is one of 50 food trucks that will fight it out as part of the first round of Thomas' Breakfast Battle, a cross-country recipe competition.

"As part of the Thomas' Breakfast Battle, Pa's Pork will utilize Thomas' iconic English Muffins and Bagels to create the ultimate breakfast recipe inspired by the cuisine of their food truck," a press release says.

Public voting for the contest's first round will open Sept. 12 at ThomasBreakfastBattle.com and last one week.

The group will be narrowed from 50 to 25 and weekly from there. The contest ends Monday, Oct. 17.

The grand prize is $25,000, and people can vote once a day.

Owned by Angela and Pete Olejnicek, Pa's Pork submitted a recipe call "The Smokestack."
